Santiago Atitlán Mixes is becoming one of the more interesting addresses in Oaxacan coffee. The Sierra Norte altitude, the isolation, the indigenous farming traditions that kept native varieties in the ground when commercial pressure pushed elsewhere — it adds up to a place that produces coffees with a specific identity.
Sr. Felipe López grows Criollo and Geisha side by side at 1,650 meters. The pairing is unusual but logical here: Criollo's deep regional roots alongside Geisha's celebrated aromatic range, both processed together through honey — the cherry pulp removed, the mucilage left to dry on the bean. It's a middle path between washed clarity and natural intensity, and with these two varieties it works in both directions. Criollo's earthy structure gives the cup a foundation; Geisha lifts it with florals and stone fruit. The honey process ties them together with a gentle sweetness that neither variety would produce as cleanly on its own.
The medium dark roast brings body to the finish without flattening what the Sierra Norte put into these beans. What you get is a cup that's more composed than a natural, more expressive than a washed — and distinctly from this place.
