Café Rústiko — Gamaliel Rios — Finca el Castaño, La Concordia, Chiapas

Chiapas · 1,500m · Pacamara · Washed · 250g

In the mountains of La Concordia, Chiapas, Finca el Castaño represents three generations of coffee cultivation. Under the leadership of Gamaliel Ríos Ortiz, this family-run farm made a decisive pivot: shifting focus away from commercial volume to pursue high-tier specialty quality. Drawing on his background as a food technologist , Gamaliel applies scientific precision to the farm's harvesting and processing—a craft honed over fifteen years alongside his father and grandfather.

At 1,500 meters above sea level, Gamaliel grows Pacamara, a hybrid variety known for its remarkably large seed size and complex potential in the cup. While Finca el Castaño experiments with natural and honey processes, this lot uses traditional washed processing (lavado) to showcase the pristine clarity and inherent sweetness of the Pacamara seed.

In the cup, the custom flavor wheel maps out a structured, multi-layered profile. Bright citrus notes of lime and lemon lead up front (cítrico), grounded by deeper dried-fruit sweetness of fig and date (frutas secas). Smooth hazelnut (nuez) and warm baking spices (especias)—cinnamon, black pepper, and green pepper—transition into a sweet, herbal finish led by mint, cane sugar, vanilla, and caramel (herbal, dulce, miel).

A big think you to Yez and all the team at Café Rústiko for bringing this coffee to Syntrophy, it's an honor to work with people who put such dedication into bringing coffees of such high quality to the world.
