Cafebré — Enrique López, Finca Chelín, Candelaria Loxicha, Oaxaca - Geisha Hydro - Natural Honey - 90g
Sierra Sur · 1,700m · Geisha · Hydro-Natural Honey · Medium · 90g
Finca Chelín sits high in Candelaria Loxicha, where Enrique López has turned the Sierra Sur into a laboratory for precision post-harvest processing. This Geisha lot was selected in preparation for the 2026 Mexican Barista Championship (Kate won 2nd place in the barista championships Mexico with this coffee).
Rather than relying solely on varietal hype, López subjects this harvest to a hybrid hydro-natural honey process—a controlled soak and maceration prior to drying with full mucilage intact. The technique anchors the Geisha’s notoriously flighty jasmine aromatics, surrounding them with a dense, viscous sweetness reminiscent of cooked agave and maple syrup.
The medium roast respects the competition pedigree: it develops enough body to carry the complex sugars without scorching the floral nuance that defines the variety.
