Cafebré — Doña Filiberta - San Pedro Ocotepec, Oaxaca - Sierra Norte - Typica and Bourbon - Semi-Washed
Sierra Norte · 1,750m · Typica & Bourbon · Semi-washed · Medium
San Pedro Ocotepec sits deep in the humid folds of the Sierra Norte, where high elevation and frequent mist slow the ripening of native Typica and Bourbon trees.
Doña Filiberta processes her harvest using a semi-washed method—depulped and dried with partial mucilage intact. It is a deliberate choice that rounds out the natural brightness of these heirloom varieties, balancing crisp citrus acidity with a panela-like sweetness and a soft floral finish reminiscent of chamomile.
Where a full wash would push raw clarity, the semi-washed process gives this Sierra Norte lot weight and warmth without muting what the elevation put into the bean.
These beans suit drinkers who like clean, complex, layered filter-brewed coffees.
